2.5 Gallon Heritage White Oak Bourbon Aging Barrel
If you’re going to put time, work, and good spirits into a barrel, start with a barrel that’s actually built for aging.
Our 2.5-Gallon Heritage Bourbon Barrels are made from brand-new white oak and professionally coopered by one of the largest professional cooperages in the country. These aren’t decorative countertop barrels dressed up to look authentic—they’re quality oak barrels made for people who care about the aging process.
One of the most important differences is what we don’t put on the barrel.
The exterior is not lacquered, varnished, or sealed. Wood is naturally porous, and traditional barrel aging relies on interaction between the spirit, oak, and surrounding environment. Leaving the exterior unfinished preserves the barrel’s natural permeability instead of encasing the wood beneath a decorative coating.
You’ll find plenty of small barrels on the market with a shiny lacquered finish. It might look pretty sitting on a shelf, but that’s not what we’re after. We’d rather build an aging barrel like an aging barrel.
We also intentionally do not install a spigot.
Every additional hole drilled through a barrel creates another potential leak point. Our Heritage Barrels have one opening with a bung, keeping the design simple and helping maintain the integrity of the barrel. If you personally want to install a spigot, you can—but we aren’t going to drill another hole into a brand-new barrel just for decoration or convenience.
These barrels are also sold without a stand. Barrel stands will be available separately, allowing you to choose whether you need one rather than paying for something you don’t.
At only 2.5 gallons, this barrel provides considerably more oak-to-spirit contact than a traditional full-size bourbon barrel, making it an excellent choice for small-batch aging and experimentation. Because smaller barrels can extract oak character much faster, taste your spirit regularly rather than aging strictly by the calendar.
Whether you’re experimenting with a fresh spirit, finishing an existing whiskey, or developing your own small-batch creation, this is a serious little barrel built with the same basic principles that make traditional oak aging work.
Key features include: 2.5-gallon capacity; brand-new white oak construction; professionally coopered in the USA; natural unfinished exterior with no lacquer or varnish; bung-only design with no factory-installed spigot; fewer drilled openings and potential leak points; no stand included; stands available separately; and ideal sizing for small-batch home spirit aging.
BARREL CARE NOTE: New oak barrels should be properly swelled and checked for leaks before filling with spirit. Because evaporation and extraction occur more rapidly in small barrels, periodically monitor both the liquid level and flavor during aging.
